Boterkoek (Shortbread pie)

Mix with hands until butter is well-blended
2 C sifted flour
2 C sugar
1/2 lb soft butter
Grease a 9'' or 10'' cake or pie pan. Put mixture in pan. Beat up
1 egg
Spread it on top of the mixture just before it goes into oven. Bake in 350° oven for 25 min. Serve in small wedges...it is very rich!
